James’ Pumpkin Soup

This is an extremely easy recipe to prepare and makes a really warming and hearty soup. For this you will need…

1 medium sized pumpkin (peeled, seeded, cubed)
2 large onions (chopped)
4-6 cloves of garlic (crushed)
4 chicken stock cubes
2 vegetable stock cubes
Generous seasoning

Place all the ingredients into a large stock pot and cover with water. Boil until pumpkin and onion are soft (around 40 minutes).

Blend using a hand blender or place in liquidiser until smooth. Season well (if it’s a little bland, add either more seasoning, stock cubes or garlic to taste then stir in until well mixed)

Either serve immediately or place back on heat until desired thickness is reached.

This soup is extremely low in calories and great on it’s own, however, I believe it’s best eaten with warm crusty bread.
