James’ Hearty Vegetable Soup

Lately I’ve been trying to get fit. It is going quite well and I’ve so far lost half a stone so only another eight to go {sigh}. Rather than dieting per se, I’ve been making my current diet more healthy and including more vegetables. So in this respect, I’ve been making a lot of soups lately.

My latest creation is a very tasty, hearty and very healthy soup using seasonal vegetables.

For this excellent soup you will need….

1 Leek
1 Swede
1/2 Celeriac
1/2  Carnival Squash
1 Sweet Potato
2 Medium Onions
1/3 Savoy Cabbage
1 Red Pepper
1/2 a Garlic Bulb
1 handful of Wild Mushrooms
20 French Beans
2 Vegetable Stock Cubes
1 tsp Onion Salt
Seasoning to taste

The first and most arduous part of this recipe is you’ll have to peel and prepare all the vegetables. There’s no getting out of it,  so wash and peel the swede, celeriac,  squash, onions and sweet potato.

Wash and de-seed the pepper. Dice all the vegetables bar the leek, french beans and garlic into cubes around 1/2 an inch in size then peel and chop the garlic. Place into a large stock pot.

Chop the leek into 1/2 inch rings, no need to discard any outer leaves and add to the stock pot.

Slice the mushrooms and top and tail the french beans, add to the stock pot.

Add 2-3 pints of water and boil until all the vegetables are soft and the volume has reduced slightly (around 40 minutes).

Take off the heat and remove half the veg from the pot with a perferated spoon and place temporarily in a bowl to one side.

Crumble the stock cubes and add to the soup. Now add the onion salt and some salt and pepper.

Using a hand blender, blend the remaining veg and water until the vegetables are completely blended and the water has become nice and thick. If the soup is too thin, place back onto the heat until desired consistancy had been attained.

At this point, add more seasoning if required.

Return the vegetables you set aside earlier back to the soup, reheat and serve.

Ideal for a cold November evening!
