This makes a very tasty, chunky and healthy soup; or if served with noodles or rice it would make a delicious main meal.
2 medium onions
1/2 celeriac
1/2 small squash
1 red pepper
1 leek
3 garlic cloves
8 mushrooms
2 chicken stock cubes
1 tsp chilli powder
1 tsp cumin powder
2 tsp ground corriander
1 tsp ground ginger
1 small handful of lemon balm or 1 stick of lemongrass
1 50g sachet of Patak Coconut Cream
2 tsp lime juice
2 pints of water
1/2 tsp sugar
Seasoning
Wash and chop all the vegetables (dice the squash and celeriac into 1/2 inch cubes)
Add veg and the rest of the ingredients to a stock pot
Boil for 25 minutes or until the vegetables are soft
Remove 3/4 of the vegetables and set aside
Blend remaining vegetables into the stock
Replace the vegetables and reheat
